My Version of Cauliflower Fried Rice

Who DOESN'T love fried rice? One of my absolute favorite meals has to be pork fried rice from just about any Chinese restaurant. Another question: Who LOVES vegetables? I know if anyone had asked me this about 6 months ago I would've said "no way, I like corn...lettuce...uhhh" *scrambling to think of any other veggies I even would be willing to eat* Since I starting counting my macros back in January I have been so much more open to trying and eating vegetables and actually began to really enjoy eating them. Don't get me wrong there's still some I don't love and thats okay but the best thing I have found to do is incorporate them in recipes you know you will enjoy AND don't be afraid to add seasonings! SOO enough about me... check out this recipe for Cauliflower Fried Rice, I promise it's delicious and only takes about 15 minutes to make.


What You'll Need:
2.5 cups of Cauliflower Florets OR riced Cauliflower (basically the same thing)
The one I use in this recipe is Green Giant brand from Wal-Mart but Trader Joe's sells bags of Riced Cauliflower.
You can also buy a head of Cauliflower and chop it in a food processor or cut the head until it is in tiny pieces that resemble rice.
1 Small Onion, chopped up
1-1.5 cup of frozen peas & carrots (depending how many veggies you want)
I used Steam Ready Mixed Vegetables which included Carrots, Green Beans, Corn, and Peas Stop and Shop brand
1 Large Egg ( I have used 2 eggs in the past but chose to only use 1 in this recipe in order to fit my macros better)
Around 3 tbsp of Soy Sauce
1 tsp Sesame Oil
Sesame Seeds (optional)
Coconut Oil Cooking Spray (regular cooking spray can be used)


Instructions for Cooking:
Preheat the skillet to about medium heat on the stove and spray with Coconut Oil
Add the Sesame Oil to the heated skillet
Add the onion, peas, and carrots, green beans, and corn to the skillet and let them fry until they are tender.
Push the onion and veggies to one side of the skillet and pour the beaten egg onto the open side (It will be easier to beat the egg before you add it) Once the egg is cooked, mix in it with the rest of the food in the skillet.
I will usually microwave the cauliflower for about 2 minutes in a seperate bowl before adding it to the mix just to make it a little more tender but you do not have to do this step
Add cauliflower to the skillet and pour the soy sauce and sesame seeds on top
Let the mixture cook until everything is tender
The Macros for the entire batch: 18g Protein, 37g Carbs, 12g Fat
This batch makes about 3-5 servings depending on the serving size
